1 Tbsp. grated lime zest 1/2 c. chopped fresh cilantro 2 Tbsp. minced garlic 1-1/2 tsp. ground cumin 2 Tbsp. olive oil 4 Alaska Halibut fillets (6 to 8-oz. each), fresh or thawed salt and pepper, to taste
What to do:
1. Heat oven to 425°F. Combine lime zest, cilantro, garlic, cumin and olive oil in small bowl. 2. Season Alaska Halibut fillets with salt and pepper and coat with cilantro-lime mixture. Transfer fillets to spray-coated baking sheet/dish. Roast fillets about 8 to 10 min., cooking just until fish is opaque throughout.
