2 c. all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 3/4 c. granulated sugar 1 c. packed brown sugar, divided 2 tsp. ground cinnamon, divided 3/4 c. (1-1/2 sticks) butter, melted 1 c. milk 1 tsp. lemon extract zest of 1 lemon 2 large eggs 1/2 c. chopped pecans
What to do:
1. Coat a 9x13-inch baking dish with cooking spray then flour. 2. In a large bowl, combine 2 cups flour, baking powder, baking soda, salt, sugar, 1/2 cup brown sugar, 1 teaspoon cinnamon, butter, milk, lemon extract, zest, and eggs. Beat until well combined; pour into prepared baking dish then cover and chill at least 8 hours, or overnight. 3. Preheat oven to 350°F. 4. In a small bowl, combine remaining 1/2 cup brown sugar and 1 teaspoon cinnamon with pecans. Sprinkle over chilled batter and bake 30 to 35 minutes, or until a toothpick inserted in center comes out clean. Cut, and serve warm.
