12 oz. Alaska Surimi Seafood (imitation crab) 1/2 c. chopped celery 1 Tbsp. chopped chives or green onions 1/3 c. low fat mayonnaise 2 tsp. Dijon-style mustard 1 tsp. lemon pepper seasoning 3 English muffin, split 6 slices (about 1 oz. ea.) or 1-1/2 c. shredded Cheddar, pepper-jack or Swiss cheese
What to do:
1. Blend together Alaska Surimi Seafood, celery, chives, mayonnaise, mustard, and lemon pepper seasoning; set aside. 2. Toast or broil muffin halves. Portion about 1/3 c. seafood on cut side of each muffin. Top each sandwich with cheese slice or 1/4 c. shredded cheese. Broil or microwave until cheese melts.
