What you need:

1/4 c. vegetable oil
1/4 c. lime juice
1-1/2 Tbsp. sugar
1-1/2 tsp. grated fresh ginger
1/2 tsp. salt
1-1/2 lb. sweet potatoes, julienned or coarsely grated (about 5-1/2 c.)
1/2 c. toasted walnuts pieces
1/4 c. sliced scallions
What to do:
1. In large bowl, whisk together oil, lime juice, sugar, ginger and salt.
2. Stir in sweet potatoes, walnuts and scallions.
3. Chill before serving.
